Recipe for Afghani Chicken

Ingredients:

For the Marinade:

  • 1 kg chicken (bone-in or boneless, as preferred)

  • 1 cup yogurt

  • 2 tablespoons fresh cream

  • 2 tablespoons ginger-garlic paste

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground cardamom

  • 1/2 teaspoon white pepper (optional)

  • Salt (to taste)

For the Curry:

  • 3 tablespoons ghee or vegetable oil

  • 1 medium onion (finely chopped)

  • 2-3 green chilies (optional, adjust to spice preference)

  • 1/4 cup cashew nut paste (made by blending soaked cashews with a little water)

  • 1/2 cup heavy cream

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon nutmeg (optional, for added warmth)

  • Salt (to taste)

  • Fresh cilantro leaves for garnish

Instructions:

  1. Marinate the Chicken:

    • In a large bowl, combine all the marinade ingredients. Add the chicken pieces, ensuring they are evenly coated. Cover and refrigerate for at least 2-3 hours, preferably overnight for deeper flavors.

  2. Cook the Chicken:

    • Heat ghee or oil in a deep pan. Add the finely chopped onion and sauté until golden brown.

    • Add the marinated chicken pieces along with the marinade. Cook on medium heat, stirring occasionally, until the chicken is partially cooked (about 10-12 minutes).

  3. Prepare the Cashew Curry:

    • Stir in the cashew nut paste, ensuring it blends well with the chicken and forms a creamy base.

    • Add the green chilies (if using) and adjust the seasoning with salt.

    • Cover the pan and let the chicken simmer gently until fully cooked and tender.

  4. Finish with Cream:

    • Lower the heat and pour in the heavy cream, stirring to incorporate. Sprinkle ground cardamom and nutmeg (if using) for enhanced aroma. Simmer for an additional 3-5 minutes, ensuring the curry achieves a rich, creamy consistency.

  5. Serve:

    • Garnish with fresh cilantro leaves and serve hot. Afghani Chicken pairs beautifully with naan, paratha, or basmati rice.
