Recipe for Ashak

Ingredients:

For the Dumplings:

  • 2 cups all-purpose flour

  • 1/2 cup water

  • 1/2 teaspoon salt

  • 2 cups chopped leeks (or a mix of leeks and scallions)

For the Meat Sauce:

  • 500g ground beef or lamb

  • 1 medium onion (finely chopped)

  • 2 garlic cloves (minced)

  • 2 tablespoons tomato paste

  • 1 teaspoon turmeric

  • 1 teaspoon ground coriander

  • Salt and pepper to taste

  • 1 cup water or stock

For the Toppings:

  • 1 cup plain yogurt (strained or thick)

  • 1 clove garlic (crushed)

  • 1 tablespoon dried mint

  • Red chili flakes or paprika for garnish (optional)

Instructions:

  1. Prepare the Dough:

    • Mix the flour, water, and salt to form a smooth dough. Knead for about 8-10 minutes, cover, and let it rest for 30 minutes.

  2. Prepare the Filling:

    • Sauté the chopped leeks and scallions in a bit of oil or butter until soft. Season lightly with salt and set aside to cool.

  3. Roll and Fill the Dumplings:

    • Roll out the dough into thin sheets and cut into 3-4 inch circles.

    • Place a small spoonful of the leek mixture in the center of each circle.

    • Fold the dough over to create a half-moon shape and seal the edges by pinching tightly.

  4. Cook the Dumplings:

    • Bring a pot of salted water to a gentle boil. Boil the dumplings in batches for 4-5 minutes or until they float. Remove with a slotted spoon and set aside.

  5. Prepare the Meat Sauce:

    • In a pan, sauté the onions and garlic until golden. Add the ground meat, turmeric, and coriander, cooking until browned.

    • Stir in the tomato paste, salt, pepper, and water/stock. Simmer for 10-15 minutes until thickened.

  6. Prepare the Yogurt Sauce:

    • Mix the yogurt with the crushed garlic and a pinch of salt.

  7. Assemble and Serve:

    • Arrange the cooked dumplings on a serving platter. Pour the meat sauce generously over the dumplings.

    • Drizzle with yogurt sauce and sprinkle dried mint on top. Garnish with red chili flakes or paprika if desired.
